Orval, Belgium a truly distinctive beer, and the only one produced by the monastery. ruddy orange in color with complex aromatics of hay, herbs, earth, and flowers with a lingering hop bitterness and a crisp, very dry finish.   
Rochefort, 8, Belgium a darker ale with round flavors of figs and prunes draped with a full caramel-like body. creamy in texture, this is a beer to spend some time with.   

Tripel

Bosteels, Tripel Karmeliest, Belgium in this case, the name tripel is in reference to the 3 grains used in brewing: barley, wheat, and oats. brewed accoring to a 300 year old abbey recipe.   13.00

St. Bernardus, Abt 12 Magnum Edition 2012, Belgium the abbey st. sixtus at westvleteren used to contract the cheese factory at watou to make their beer, not wanting to do it themselves. many years later they took control of the process to adhere to trappist standards and bottled it as westvleteren. however, when the agreement came to an end, the brewers at watou were allowed to keep the recipes and yeast and bottle the beer under the name st. bernardus. so although westvleteren rarely exports to the us, gress who does? have 6 or so friends who want to split a killer beer?  (1.5lt) 80.00

High And Mighty, Beer Of The Gods, Holyoke, MA not really a pale ale, but rather a german-inspired mix between kolsch and altbier, almost a cross between ale and lager. their flagship beer, it's quite smooth and satisfying.   6.00

India Pale Ale

Uinta, Hop Notch IPA, UT a west-coast-style ipa-piney, restinous, and citrusy. refreshing and bright, the lightest ipa on this list.   6.50
Dogfish Head, 90 Minute IPA, DE continuously hopped for 90 minutes, this is quite a powerful ipa, but is balanced by a rich malty core, offering a raisiney fruit aspect to offset the bitter hops.   9.25
Stone, Oaked Arrogant Bastard, CA same aggressive beer as the original bastard, but aged on oak chips to soften the bitter edge of the hops   10.00
Six Point, Resin, NY an utterly ridiculous amount of highly extracted pacific northwest hops provide the bitter, resinous flavor and aroma that is superbly balanced by a generous amount of malt flavor   8.75
Dogfish Head, 120 Minute, DE this beer contains a stupid amount of hops. it's also a relatively sweet beer with liqueur-like tropical fruit to keep it from ripping your mouth apart. split a bottle after dinner instead of dessert wine or cognac.   23.00

Boulevard, Collaboration #3 - Stingo, MO a collaboration with massachusetts based pretty things. a old style english strong ale. a portion was fermented normally, some in oak barrels, while some was soured before fermentation. rich, earthy flavors, with a bit of sour cherry.  (750ml) 24.00
